PASQUALE
As a first-generation Australian-Italian born to Calabrian parents from a humble hillside village, I carry a profound connection to my heritage and the culinary traditions passed down through generations.
From an early age, I found myself drawn to the bustling kitchen of my home, where my mother, nonna, extended family and friends would come together to create nourishing meals infused with love and tradition.
I spent countless years working in our family market garden alongside my parents, tending the land and harvesting fresh produce. It was here that I developed a deep appreciation for quality ingredients, their importance to cucina povera and the flavours that form the soul of Southern Italian cuisine.
I have honed my cooking skills through a lifetime of preparing authentic dishes, complemented by formal training in Italy, ensuring a perfect blend of tradition and knowledge.
Food is the bridge that connects me to my roots and ancestors. Cucina Calabria is a way for me to honour and share the culinary heritage that has shaped me.
